Ingredients

  • 1 1/4 cups large egg whites, from about 9
  • 1 1/2 cups sugar, divided
  • 1 cup cake flour
  • 1 1/4 teaspoons cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt

Directions

Step 1 -Allow the egg whites to stand at room temperature in a bowl for 30 minutes.

Step 2 -Arrange the oven rack in the lowest position. Preheat the oven to 350 degrees F.

Step 3 -Using your sifter, combine 1/2 cup of the sugar and the flour together. Set aside for later.

Step 4 -Add the cream of tartar, vanilla, almond extract, and salt to the egg whites.

Step 5 -Beat the egg whites with a hand mixer or with a stand mixer until soft peaks form.

Step 6 -Gradually add in the remaining 1 cup of the sugar, a couple of tablespoons at a time. Continue beating until stiff peaks form.

Step 7 -Gently and gradually fold in the flour mixture, 1/2 cup at a time.

Step 8 -Spoon the batter into an ungreased tube pan.

Step 9 -Bake until it’s slightly golden and the top is dry, about 35-40 minutes.

Step 10 -Remove the pan from the oven and immediately invert.

Step 11 -Allow your cake to cool completely.

Step 12 -Add toppings of your choice and serve!
