Well, consider this one big Tex-Mex bake! It's filled with taco-seasoned, juicy ground beef, spicily-seasoned veggies, melty, gooey cheese, and the grand finale responsible for all the noise... nacho-cheese-flavored tortilla chips! Yum, yum, yum. With-A-Crunch Casserole brings lots of delicious buzz that will have everyone coming back for bite after bite!
Ingredients
- 2 tablespoons vegetable oil
- 1 yellow onion, finely chopped
- 2 cloves garlic, thinly sliced
- 1 pound ground beef
- 1 (1-ounce) package taco seasoning
- 1 (14.5-ounce) can diced fire-roasted tomatoes
- 1 (4.25-ounce) can chopped green chiles
- 1 (15-ounce) can cream of chicken soup
- 1 (9.25-ounce) bag nacho-cheese-flavored tortilla chips, crushed into small pieces
- fresh cilantro, optional, to taste, for garnish
- 1 1/3 cups cheddar cheese, shredded, divided
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Heat the vegetable oil in a large skillet over medium-high heat.
Step 3 -Add the onion and sauté until it is softened and translucent, about 6 minutes.
Step 4 -Add the garlic to the onion and cook until it is fragrant, about 1 minute.
Step 5 -Add the beef to the onion mixture and cook, while breaking it up with a spoon, until it is completely browned, about 5-7 minutes.
Step 6 -Add the taco seasoning to the meat mixture and stir to incorporate.
Step 7 -Add the tomatoes, the green chiles, and the cream of chicken soup to the meat mixture and mix to combine.
Step 8 -Cook the meat mixture, stirring occasionally, until it thickens, about 5 minutes.
Step 9 -Transfer the meat mixture from the heat.
Step 10 -Pour 1/3 of the meat mixture in the bottom of a 9x13-inch baking dish.
Step 11 -Sprinkle 1/3 cup of the cheese over the layer of meat in the dish.
Step 12 -Sprinkle 1/2 of the crushed chips over the cheese layer.
Step 13 -Add 1/3 of the meat mixture to the baking dish, spreading it evenly over the chips.
Step 14 -Repeat the layering process with 1/3 cup of the cheese and the remaining chips.
Step 15 -Top the casserole with the remaining meat mixture and the remaining cheese.
Step 16 -Cover the baking dish with aluminum foil and bake for 30 minutes.
Step 17 -Remove the foil and bake until the cheese begins to brown, about 20 minutes.
Step 18 -Allow the dish to cool slightly.
Step 19 -Garnish with the cilantro and serve.
