The Winter Berry Bake is truly a treat that you could fall in love with no matter the season! But wow does it brighten up even the darkest winter night! A bubbly, sweet, tart, and juicy blackberry filling, delicately sweetened and topped with sugary pie crust... isn't that just the stuff of dreams? With rich butter to enhance the fruity goodness and served alongside ice cream, the Winter Berry Bake may not seem snowy, but it's the warm, wonderful treat that will make the holidays even brighter!
Ingredients
- 2 1/2 cups plus 1/3 cup all-purpose flour, divided, plus more, to taste, for dusting a work surface
- 1 3/4 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 cup shortening
- 2/3 cup milk
- 2 cups plus 1 tablespoon sugar, divided
- 1 teaspoon fresh lemon juice
- 2 (16-ounce) packages frozen blackberries
- 1/4 cup butter, cut into 1/4-inch pieces, divided
- vanilla ice cream, optional, to taste, for serving
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Lightly grease a baking sheet and a 9x13-inch baking dish.
Step 3 -In a medium bowl, add 2 1/2 cups of the flour, the baking powder, and the salt and whisk to combine.
Step 4 -Cut the shortening into the flour mixture using a pastry blender or a fork until the mixture is slightly crumbly.
Step 5 -Add the milk to the flour mixture and stir with a fork until all of the dry ingredients are moistened and the mixture is soft enough to form it into a soft ball.
Step 6 -Using the extra flour, lightly dust a work surface.
Step 7 -Turn the dough out onto the prepared surface and knead it about eight times.
Step 8 -Divide the dough in half.
Step 9 -Roll 1 dough half to 1/4-inch thickness and cut it into 1-inch-wide strips.
Step 10 -Place the dough strips onto the prepared baking sheet.
Step 11 -Bake the strips until lightly browned, about 15 minutes.
Step 12 -Transfer the strips to a wire rack to cool completely, about 30 minutes.
Step 13 -Reduce the oven temperature to 350 degrees F.
Step 14 -Roll the remaining dough half to 1/4-inch thickness.
Step 15 -Cut the dough into 1-inch-wide strips.
Step 16 -In a large bowl, add 2 cups of the sugar, the remaining 1/3 cup of the flour, the lemon juice, and the frozen blackberries and gently stir to combine.
Step 17 -Spoon 1/2 of the blackberry mixture into the prepared baking dish.
Step 18 -Break each of the baked dough strips into 2-3 pieces.
Step 19 -Place the baked dough pieces on top of the blackberry mixture layer.
Step 20 -Dot the blackberry mixture layer with 1/2 of the butter pieces.
Step 21 -Spoon the remaining blackberry mixture over the baked dough and the butter layer.
Step 22 -Arrange the unbaked dough strips in a lattice design over the filling.
Step 23 -Sprinkle the dough strips with the remaining 1 tablespoon of the sugar.
Step 24 -Dot the blackberry mixture with the remaining butter pieces.
Step 25 -Bake until the pastry on top is golden and the mixture is bubbly, about 50 minutes-1 hour.
Step 26 -Serve with the vanilla ice cream.
