Ingredients
- For the scones:
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 5 tablespoons unsalted butter, cold, grated
- 1 cup strawberries, chopped
- 1/2 cup white chocolate chips, can substitute a bar cut into chunks
- 1 1/2 cups heavy cream
- For the glaze:
- 1/4 cup lemon juice, freshly squeezed
- 1 cup powdered sugar, sifted
- 1/2 tablespoon unsalted butter, melted
Directions
Step 1 -In a bowl, add the flour, the baking powder, the salt, and the sugar and gently whisk to combine.
Step 2 -Add 5 tablespoons of the grated butter to the dry ingredients mixture and toss until combined and the butter is evenly distributed.
Step 3 -Add the strawberries and the white chocolate chips to the dry ingredients mixture and fold to combine.
Step 4 -Make a well in the center of the dry ingredients.
Step 5 -Add the heavy cream to the well and fold it into the dry ingredients mixture until just incorporated into a dough. Be careful not to overwork the dough.
Step 6 -Chill the dough in the refrigerator for at least 20 minutes and up to 4 hours.
Step 7 -Preheat the oven to 400 degrees F.
Step 8 -Line a baking sheet with parchment paper.
Step 9 -Form the dough into 12 medium-sized mounds.
Step 10 -Arrange the dough mounds on the prepared baking sheet.
Step 11 -Bake the dough mounds until they become just barely golden-brown on top, about 16-20 minutes.
Step 12 -In a small bowl, add the lemon juice, the powdered sugar, and the remaining melted butter and whisk to combine into a glaze.
Step 13 -Allow the scones to cool.
Step 14 -Drizzle the scones with the glaze and allow it to set.
Step 15 -Serve.
