Ultimate Whipped Sweet Potatoes are just a joy to make, and even more of a joy to eat!
Ingredients
- 3 pounds sweet potatoes
- water, to taste
- 1/3 cup unsalted butter, plus more, optional, to taste, for serving
- 3 tablespoons heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cinnamon
- ground nutmeg, to taste
- parsley or chives, optional, to taste, chopped, for garnish
Directions
Step 1 -Wash, peel, and chop the sweet potatoes into chunks.
Step 2 -Place the potato chunks in a steamer basket.
Step 3 -Fill a pot with water until the surface of the water sits just below where the bottom of the steamer basket will fall, without touching, then bring the water to a boil. Add the steamer basket and cover the pot.
Step 4 -Steam the sweet potatoes until they are fork-tender, about 15-20 minutes.
Step 5 -Transfer the sweet potatoes to a mixing bowl.
Step 6 -Using an electric hand mixer on low speed, break up the sweet potatoes.
Step 7 -Increase the mixing speed a little at a time and continue to whip the sweet potatoes until smooth.
Step 8 -In a saucepan over medium-low heat, melt 1/3 cup of the butter.
Step 9 -Transfer the saucepan from the heat.
Step 10 -Add the heavy cream, the salt, the pepper, the cinnamon, and the nutmeg to the melted butter and whisk to combine.
Step 11 -Pour the cream mixture over the sweet potatoes and whisk until just creamy.
Step 12 -Transfer the sweet potatoes to a serving dish.
Step 13 -Serve topped with the extra butter and garnished with the chopped parsley.
