Each crispy lettuce leaf adds a refreshing crunch to every bite, and as you sink your teeth into them, you taste the juicy, savory turkey concoction all rolled up within. The ideal 30-minute meal, these Turkey Lettuce Wraps really pack a punch!
Ingredients
- For the lettuce wraps:
- 2 tablespoons plus 1 teaspoon olive oil, divided
- 1 pound ground turkey
- kosher salt, to taste
- black pepper, to taste
- 1 red onion, chopped
- 3 cloves garlic, finely chopped
- 2 teaspoons chili powder
- 1 cup water
- 1 1/2 cups frozen corn kernels
- 1 (15.5-ounce) can black beans, drained and rinsed
- 8 bibb lettuce leaves
- Optional toppings:
- queso fresco, to taste, crumbled
- avocado, to taste, diced
- tomatoes, to taste, diced
Directions
Step 1 -In a large skillet over medium-high heat, add 2 tablespoons of the oil.
Step 2 -Add the turkey, the salt, and the pepper to the heated oil and cook, while crumbling, until the turkey is cooked through, about 6 minutes.
Step 3 -Transfer the cooked turkey to plate.
Step 4 -In the same skillet over medium-low heat, add the remaining oil, the red onions, and the garlic and cook, stirring occasionally, until the onions are tender, about 8 minutes.
Step 5 -Add the chili powder, the cooked turkey, and the water to the onion-garlic mixture, then increase the heat to medium-high. Cook until most of the water is evaporated, about 4-5 minutes.
Step 6 -Add the corn and the beans to the turkey mixture and cook until they are heated through and no liquid remains, about 3 minutes.
Step 7 -Season the turkey mixture with the salt and the pepper.
Step 8 -Evenly top the lettuce leaves with the turkey mixture.
Step 9 -Serve the wraps topped with the queso fresco, the diced avocado, and the tomatoes.
