Ingredients

  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract, optional
  • 1 1/3 cups all-purpose flour, sifted
  • 1 pound fresh strawberries, hulled, halved or quartered, divided
  • whipped cream, optional, to taste, for serving

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Grease a 9-inch round cake pan or pie plate.

Step 3 -In a bowl, add the eggs, the sugar, and the vanilla and using an electric hand-mixer on medium speed, beat until pale in color, about 3 minutes.

Step 4 -Add the flour to the egg mixture and using a rubber spatula, gently fold until just combined and a smooth batter forms.

Step 5 -Add almost all of the strawberries to the batter, reserving a few for topping, and fold to combine.

Step 6 -Spoon the batter into the prepared baking pan.

Step 7 -Top the batter with the reserved strawberries.

Step 8 -Bake the cake for 5 minutes.

Step 9 -Reduce the oven temperature to 350 degrees F.

Step 10 -Continue to bake the cake until golden on top and a toothpick inserted into the center comes out clean, about 30-35 minutes.

Step 11 -Allow the cake to cool until it is just warm.

Step 12 -Serve with the whipped cream.
