Ingredients

  • 2 teaspoons vegetable oil
  • 1 pound ground chicken
  • salt, to taste
  • pepper, to taste
  • 5 ounces shiitake mushrooms, stems discarded and caps finely diced
  • 1/2 cup onion, finely diced
  • 1 (8-ounce) can water chestnuts, drained and finely diced
  • 1 1/2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 5 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons sesame oil
  • 1/3 cup green onions, sliced
  • 1 head butter lettuce, leaves separated
  • black sesame seeds, to taste, for garnish

Directions

Step 1 -In a large pan over medium-high heat, add the vegetable oil.

Step 2 -Add the ground chicken, the salt, and the pepper to the heated oil and cook, while crumbling, until it is mostly cooked through, about 5-6 minutes.

Step 3 -Add the mushrooms and the onions to the chicken and cook until the veggies are soft, about 4-5 minutes.

Step 4 -Stir the water chestnuts, the garlic, and the ginger into the chicken mixture and cook, about 1 minute.

Step 5 -In a small bowl, whisk the hoisin sauce, the soy sauce, the rice vinegar, and the sesame oil together.

Step 6 -Pour the sauce over the chicken mixture and toss to evenly coat.

Step 7 -Sprinkle the green onions over the chicken mixture.

Step 8 -Evenly spoon the chicken mixture into each of the lettuce leaves.

Step 9 -Serve the lettuce cups garnished with the sesame seeds.
