Ingredients

  • 1 (16-ounce) package fettuccine, uncooked
  • 2 tablespoons olive oil
  • 1 (6-ounce) package baby spinach
  • 4 cloves garlic, minced
  • 1 pound shrimp, uncooked, peeled and deveined
  • 2 medium plum tomatoes, seeded and chopped
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 cup parmesan cheese, shredded

Directions

Step 1 -In a large pot of salted, boiling water, cook the fettuccine to al dente, according to the package directions. Drain the fettuccine and set it aside.

Step 2 -While the fettuccine is cooking, in a large, deep skillet over medium heat, add the olive oil and the baby spinach, and sauté until the spinach leaves begin to wilt, about 2 minutes.

Step 3 -Add the garlic to the spinach and cook, about 1 minute.

Step 4 -Add the shrimp, the tomatoes, the Italian seasoning, and the salt to the spinach mixture and sauté until the shrimp are cooked through and turn pink, about 2-3 minutes.

Step 5 -Add the fettuccine to the shrimp mixture, and toss to coat.

Step 6 -Evenly sprinkle the fettuccine with the parmesan cheese.

Step 7 -Plate and serve.
