Believe it or not, it gets even better with some tangy pickled onions and earthy fresh herbs on top. Ingredients

  • 4 (3.5-inch) squares focaccia bread, sliced in half, or 8 pieces naan, toasted
  • arugula, to taste
  • 1 (8-ounce) fresh mozzarella ball, sliced
  • 2 tomatoes, sliced
  • 1/3 cup cherry tomatoes, optional, halved and roasted
  • pickled onions, to taste, store-bought or homemade
  • basil leaves, to taste
  • extra-virgin olive oil, to taste
  • flaky sea salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 -On the bottom halves of the focaccia, evenly add the arugula, the mozzarella, the tomato slices, the roasted cherry tomatoes, and the pickled onions.

Step 2 -Top the pickled onions with the basil leaves, the olive oil, the salt, the pepper, and the top halves of the focaccia.

Step 3 -Serve.
