Ingredients

  • 1 quart warm water
  • 1/4 cup plus 1 teaspoon kosher salt, divided
  • 4 chicken breasts, boneless and skinless, optionally pounded to an even thickness
  • 1 tablespoon butter, melted
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Directions

Step 1 -In a large bowl, add the warm water and 1/4 cup of the kosher salt and stir until most of the salt is dissolved and a brine forms.

Step 2 -Add the chicken breasts to the brine and let them sit for at least 15 minutes at room temperature and up to 6 hours covered and refrigerated.

Step 3 -Transfer the brined chicken breasts from the brine, rinse them under cold water, and pat them dry with paper towels.

Step 4 -Preheat the oven to 450 degrees F.

Step 5 -In a 9x13-inch baking dish, add the brined chicken breasts in a single layer.

Step 6 -Brush both sides of the chicken breasts with the melted butter.

Step 7 -In a small bowl, add the remaining kosher salt, the ground black pepper, the garlic powder, and the paprika and whisk to combine.

Step 8 -Sprinkle the seasoning mixture evenly over the chicken breasts on both sides.

Step 9 -Roast the chicken until the breasts are cooked through with the meat reaching an internal temperature of 165 degrees F, about 15-18 minutes.

Step 10 -Transfer the chicken breasts to a clean plate and loosely tent the plate with foil.

Step 11 -Let the chicken breasts rest for 5-10 minutes.

Step 12 -Slice and serve warm.
