It's a new day and a new way to look at breakfast! Sunrise Grilled Cheese takes you back to your childhood in a more adult-like way! Loaded with sausage crumbles and a fluffy egg scramble that's melted together with a trio of cheeses, these sourdough-hugged handhelds are lathered up with some beautiful butter and then grilled to golden-brown. Oh, and there's a little bit of spinach thrown in there for good, healthy measure. Don't waste another day without trying the Sunrise Grilled Cheese. It's sure to melt your heart and your hunger!
Ingredients
- 1/2 pound hot pork sausage
- 6 large eggs
- 1 1/2 teaspoons water
- 1/2 teaspoon seasoned salt
- 4 tablespoons butter, softened, divided
- 1 cup colby cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup cotija cheese, grated
- 1/2 cup baby spinach
- 8 slices sourdough bread
Directions
Step 1 -In a large skillet over medium-high heat, add the sausage and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
Step 2 -Drain and discard the excess grease. Wipe out the skillet.
Step 3 -In a large bowl, add the eggs, the water, and the seasoning salt and whisk until it is well-combined.
Step 4 -In the same skillet over medium heat, melt 1 tablespoon of the butter, while swirling to coat the bottom of the skillet.
Step 5 -Add the egg mixture to the melted butter and stir to combine. Cook, while stirring, until it is almost set.
Step 6 -Add the cooked sausage to the egg mixture and cook, while stirring, until the egg mixture is completely set.
Step 7 -Pour the egg mixture into a large bowl and cover to keep warm. Wipe out the skillet.
Step 8 -In a large bowl, add the colby cheese, the Monterey Jack cheese, and the cotija cheese and stir to combine.
Step 9 -Evenly layer the spinach, the egg mixture, and the cheese mixture on top of 4 of the bread slices.
Step 10 -Place the 4 remaining bread slices on top of each of the sandwiches.
Step 11 -Evenly spread the remaining butter on the top and the bottom of each of the sandwiches.
Step 12 -In a clean, large skillet over medium-high heat, add the buttered sandwiches in batches and cook until the bread is golden-brown and the cheese mixture is melted, about 2-4 minutes on each side.
Step 13 -Slice and serve.
