Ingredients

  • 8 ounces spaghetti
  • 3 tablespoons olive oil, plus more, to taste
  • 1 pound shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons butter
  • 1 tablespoon garlic, minced
  • 1/4 cup sun-dried tomatoes
  • 1 teaspoon all-purpose flour
  • 1 cup heavy cream
  • 1/4 cup parmesan cheese, grated, plus more, to taste, for serving
  • 3 cups baby spinach
  • 2 tablespoons fresh basil, finely sliced, for serving

Directions

Step 1 -In a large pot of salted boiling water, cook the spaghetti to al dente, according to the package directions.

Step 2 -Drain the pasta and toss it with a drizzle of the extra olive oil to keep the spaghetti from sticking together. Set the spaghetti aside.

Step 3 -In a large skillet over medium-high heat, heat the remaining 3 tablespoons of olive oil until sizzling.

Step 4 -Add the shrimp to the heated oil and season with the salt and the black pepper.

Step 5 -Sauté the shrimp until they are browned on both sides and reach an internal temperature of 145 degrees F, about 5 minutes.

Step 6 -Transfer the shrimp to a large platter.

Step 7 -In the same large skillet, add the butter, the garlic, and the sun-dried tomatoes and sauté until fragrant, about 1 minute.

Step 8 -Add the flour to the butter mixture and mix until well-combined, about 2 minutes.

Step 9 -Add the heavy cream and 1/4 cup of the parmesan cheese to the butter mixture and cook, stirring constantly, until the sauce is simmering.

Step 10 -Reduce the heat to medium and cook the sauce, stirring constantly, until thickened to your desired consistency.

Step 11 -Add the spinach to the sauce mixture and cook, while stirring, until the spinach is wilted, about 1 minute.

Step 12 -Add the cooked shrimp to the sauce mixture and toss well to coat.

Step 13 -Add the cooked spaghetti to the shrimp mixture, tossing well to combine and cooking until it is heated through, about 1-2 minutes.

Step 14 -Evenly sprinkle the fresh basil and the extra parmesan cheese on the top of the shrimp mixture.

Step 15 -Serve.
