Ingredients

  • 2 teaspoons olive oil
  • 1 pound lean ground beef
  • 1/2 cup onion, diced
  • 2 teaspoons fresh garlic, minced
  • 1/2 teaspoon salt, plus more, to taste
  • 1/4 teaspoon pepper, plus more, to taste
  • 1 (10-ounce) package frozen corn kernels
  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon fresh basil, chopped
  • 1 1/2 teaspoons fresh thyme leaves, chopped
  • 1 tablespoon salted butter
  • 2 teaspoons Worcestershire sauce

Directions

Step 1 -In a large skillet over medium-high heat, add the olive oil.

Step 2 -Add the beef, the onions, the garlic, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper to the heated olive oil and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 3 -Reduce the heat to low.

Step 4 -Stir the corn, the zucchinis, the tomatoes, the basil, the thyme, the butter, and the Worcestershire sauce into the beef mixture. Cover the skillet and cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

Step 5 -Taste the beef mixture and season with the extra salt and the extra pepper, as needed.

Step 6 -Serve.
