Pink lemonade has long been a symbol of summer fun, and Sparkling Pink Lemonade is ready to bring that same vibe with a little extra bubbly! This rosy brew is made with tart rhubarb to balance out the sunny sweetness of the lemonade! With some carbonation to mark the occasion, Sparkling Pink Lemonade is light and refreshing, and just as eager for fun as you are! Think pink with this drink!
Ingredients
- 3 1/2 cups water
- 5 cups rhubarb, fresh or frozen, thawed if frozen, chopped
- 3/4 cup sugar
- 2 (3-inch) strips lemon zest
- 3 sprigs fresh mint, plus more, to taste, for garnish
- 1 cup lemon juice, freshly squeezed
- 2 cups lemon-lime soda or sparkling water
- ice, to taste
- lemon slices, optional, to taste, for garnish
Directions
Step 1 -In a saucepan over high heat, add the water, the rhubarb, the sugar, the lemon zest, and 3 sprigs of the mint and stir to combine.
Step 2 -Bring the rhubarb mixture to a boil and cook, while stirring, until the sugar is dissolved.
Step 3 -Reduce the heat to low and cover the saucepan.
Step 4 -Let the rhubarb mixture simmer for 20 minutes.
Step 5 -Transfer the saucepan from the heat and allow the rhubarb mixture to cool.
Step 6 -Strain the rhubarb mixture through a wire-mesh strainer into a large pitcher, pressing on the solids to extract as much of the liquid as possible.
Step 7 -Discard the solids in the strainer.
Step 8 -Add the lemon juice and the soda to the rhubarb mixture and stir to combine.
Step 9 -In serving glasses, pour the lemonade over the ice.
Step 10 -Garnish with the extra mint and the lemon slices and serve.
