This recipe takes fast food and makes it cozy. Bacon Cheeseburger Soup is the perfect dish to make on an indulgent weekend. It's a little more hands-on than a typical slow cooker recipe (you'll have to cook the beef separately and make a roux to thicken the soup), but the result is worth it. Beefy, bacon, cheesy goodness delivered in a bowl. Slow Cooker Bacon Cheeseburger Soup is as scrumptious as it sounds.
Ingredients
- 4 small russet potatoes, peeled and diced
- 1 small white or yellow onion, chopped
- 1 cup carrots, shredded
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 3 cups chicken broth
- 1 pound lean ground beef
- 8 slices bacon, cooked and chopped
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups Pepper Jack cheese or cheddar cheese, shredded
- green onions, optional, to taste, chopped, for garnish
Directions
Step 1 -Place the potatoes, the carrots, the onions, the dried basil, and the parsley into a large slow cooker.
Step 2 -Pour the chicken broth over the vegetables and cover with the lid.
Step 3 -Cook on low heat for 6-8 hours, or high heat for 4-5 hours, until the potatoes are tender.
Step 4 -About 45 minutes before serving, crumble and cook the ground beef in a large skillet over medium-high heat until the beef is no longer pink, about 6-8 minutes.
Step 5 -Drain the grease from the skillet and pour the cooked ground beef into the slow cooker.
Step 6 -Add in the cooked bacon.
Step 7 -Wipe out the hot skillet with a paper towel carefully and add the butter. When the butter melts, whisk in the flour and cook until bubbly and golden-brown, about 1 minute.
Step 8 -Whisk in the milk, the salt, and the pepper. Then, pour the milk mixture into the slow cooker and stir to combine.
Step 9 -Add the shredded cheese into the slow cooker. Stir it well.
Step 10 -Cover with the lid and cook until the cheese is melted, about 20 minutes.
Step 11 -Garnish with the green onions and serve.
