Ingredients

  • For the sauce:
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine, optional
  • 2 tablespoons ketchup
  • 1/4 cup chicken broth or water
  • 1 tablespoon cornstarch
  • For the stir-fry:
  • 1 tablespoon vegetable oil
  • 1 pound shrimp, peeled and deveined
  • 1/2 tablespoon ginger, freshly grated
  • 1 tablespoon garlic, chopped
  • 1 medium red bell pepper, sliced
  • 1 tablespoon green onions, finely chopped
  • peanuts, optional, to taste, crushed, for topping
  • white rice, optional, to taste, cooked and hot, for serving

Directions

Step 1 -In a small mixing bowl, add the soy sauce, the Shaoxing wine, the ketchup, the broth, and the cornstarch and whisk until smooth.

Step 2 -In a large skillet over medium-high heat, add the oil until it sizzles.

Step 3 -Add the shrimps and cook, while stirring, until they turn pink and reach an internal temperature of 145 degrees F, about 4-6 minutes.

Step 4 -Add the ginger and the garlic to the skillet and cook until fragrant, about 1 minute.

Step 5 -Add the sauce mixture and the bell pepper and cook, while tossing well, until the sauce simmers and thickens, about 2-3 minutes.

Step 6 -Add the green onions and stir to combine.

Step 7 -Top with the crushed peanuts and serve with the white rice.
