Savory roast beef is sandwiched between toasted, flavorful slices of rye, with some mustard for sharp tang, caramelized onions for sweetness, and Gruyère cheese for smoky, melty goodness. Oh yes, Rumble Sandwich is the title holder of Lunchtime Champion!
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- kosher salt, to taste
- ground pepper, to taste
- 1 teaspoon thyme leaves
- 1 tablespoon water
- 4 slices rye bread
- 1 tablespoon unsalted butter, melted
- 1 tablespoon whole-grain mustard
- 2 ounces Gruyère cheese
- 8 slices deli roast beef
Directions
Step 1 -In a medium skillet over medium heat, add the olive oil.
Step 2 -Add the onions to the hot oil and season them with the salt and the pepper.
Step 3 -Cover the skillet and cook the onions, while stirring occasionally, until they begin to turn golden, about 12 minutes.
Step 4 -Reduce the heat to medium-low.
Step 5 -Add the thyme leaves and cook, uncovered and stirring occasionally, until the onions are golden-brown, about 15-20 minutes. Add the water if the onions start to stick to the skillet.
Step 6 -Brush 1 side of each of the slices of the bread evenly with the melted butter.
Step 7 -On 2 slices of the bread, buttered-side down, evenly add the mustard, the cheese, the roast beef slices, and the caramelized onions.
Step 8 -Close the sandwiches with the remaining bread slices, buttered-side up.
Step 9 -In a medium skillet over medium heat, add the sandwiches and cook them covered, flipping once, until the bread is crisp and the cheese is melted, about 4-5 minutes per side.
Step 10 -Serve hot.
