These brownies capture one of the greatest ice cream flavors ever invented! Rocky Road Brownies are topped with melted, shiny chocolate, puffy pillowy marshmallows, and crunchy walnuts. With a foundation of fudgy brownie, these treats are truly incredible! They may be called Rocky Road Brownies but enjoying them is a smooth road!
Ingredients
- 1/2 cup butter unsalted, cut into pieces
- 12 ounces semisweet chocolate chips, divided
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup all-purpose flour, spooned and leveled
- 1 cup mini marshmallows
- 1/2 cup walnuts, chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line the bottom of an 8-inch square baking pan with parchment paper, leave an overhang on two sides so you can easily pull the brownies out.
Step 3 -Grease the baking pan well.
Step 4 -Set a heatproof bowl over a pan of water that is simmering,
Step 5 -Add in the butter and 1 cup of the chocolate chips, stirring occasionally until the chocolate is melted, about 3-5 minutes.
Step 6 -Move the chocolate mixture off of the heat, and stir in the granulated sugar, the brown sugar, and the salt.
Step 7 -Gradually add in the eggs, stirring constantly to prevent the eggs from scrambling.
Step 8 -Add the flour and mix until just combined but avoid overmixing.
Step 9 -Spread out the batter evenly into the prepared pan.
Step 10 -Bake until a toothpick inserted into the center comes out with only a few moist crumbs attached, about 25-35 minutes.
Step 11 -Move the brownies out of the oven, and sprinkle with the remaining chocolate chips, the marshmallows, and the walnuts.
Step 12 -Bake again until the chocolate is shiny and the marshmallows have puffed, about 5 minutes.
Step 13 -Let the brownies cool completely in the pan.
Step 14 -Lift the brownies from the pan onto a work surface, and cut them into 16 squares.
Step 15 -Serve.
