Ingredients

  • 3/4 cup walnuts
  • 6 cups arugula
  • 1 ripe pear, cored and thinly sliced
  • 3 1/2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil
  • 1/2 cup blue cheese, crumbled, for topping

Directions

Step 1 -In a dry, deep pan over medium heat, add the walnuts and toast, stirring constantly, about 1-2 minutes.

Step 2 -Allow the walnuts to cool, for about 5-10 minutes, then roughly chop the walnuts.

Step 3 -In a large bowl, add the arugula, the pear, and the toasted walnuts.

Step 4 -In a small bowl, whisk together the vinegar, the honey, the salt, the pepper, and the olive oil.

Step 5 -Drizzle the dressing over the salad and top with the crumbled blue cheese.

Step 6 -Serve.
