Rubbed with a herbaceous spice mixture, the Roasted Pork Shoulder is tender, tantalizing, and perfect for pairing with potatoes, rice, and hearty vegetables. Ingredients
- 6 pounds pork shoulder, bone-in
- 4 cloves garlic, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon olive oil
- 2 tablespoons kosher salt, or to taste
- 2 teaspoons sugar
- 2 teaspoons ground black pepper
Directions
Step 1 -Dry the pork shoulder on all sides with a paper towel.
Step 2 -Trim the excess fat from the pork.
Step 3 -Using a sharp knife, score the meat in a criss-cross pattern.
Step 4 -Combine the garlic, rosemary, thyme, olive oil, kosher salt, sugar, and black pepper in a bowl.
Step 5 -Apply the spice rub marinade on all sides of the pork and allow the pork to sit out to marinate for 3-4 hours, or cover and let marinate in the refrigerator overnight.
Step 6 -Preheat the oven to 275 degrees F.
Step 7 -Place the roast in a roasting pan or on a baking sheet lined with plenty of aluminum foil.
Step 8 -Roast the pork until the internal temperature reaches 170 degrees F, about 3-4 hours. Each pound of pork adds about 25-30 minutes of roasting time.
Step 9 -Remove the roast from the oven and allow it to rest uncovered for another 30 minutes. The temperature should rise about 5-10 degrees while it rests.
Step 10 -Slice or shred to serve warm.
