Simple and plentiful, Poor Man's Burrito Bowl is packed with great taste from a lot of great resources. From an economical and meal-satisfaction standpoint, some fluffy rice is topped with an abundance of flavorful black beans, a profusion of spicy salsa, unlimited cheddar cheese, and even some green onions and jalapeños to liven up the fortune 500-worthy taste party. Ingredients
- 2 cups long grain white rice
- 1/2 teaspoon salt
- 3 cups water
- 2 (15-ounce) cans black beans, drained and rinsed
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1 (16-ounce) jar salsa
- 6 ounces cheddar cheese, shredded
- 1 bunch green onions, sliced, for serving
- 1 jalapeño, optional, sliced, for serving
Directions
Step 1 -In a medium saucepan over high heat, add the rice, the salt, and the water.
Step 2 -Cover the saucepan and bring the water to a full boil.
Step 3 -Reduce the heat to low and let the rice simmer until the liquid is totally absorbed, about 15 minutes.
Step 4 -Turn off the heat and leave the saucepan on the stovetop, covered, to let the rice rest, about 5 minutes.
Step 5 -In a separate medium saucepan over medium heat, add the black beans, the cumin, and the garlic powder and cook, while stirring often, until heated through, about 5 minutes.
Step 6 -Fluff the rice with a fork.
Step 7 -In a serving bowl, add about 1 cup of the cooked rice, about 1/2 cup of the warm seasoned black beans, about 1/3 cup of the salsa, and about 1/4 cup of the cheddar cheese.
Step 8 -Repeat with the other serving bowls and the remaining ingredients.
Step 9 -Top the burrito bowls with the green onions and the jalapeños and serve.
