Ingredients

  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/3 cup parmesan cheese, grated
  • 2 tablespoons garlic-herb seasoning blend
  • 1 pound tilapia fillets

Directions

Step 1 -Preheat the oven to 450 degrees F.

Step 2 -Coat a sheet of foil with cooking spray before placing it on a baking sheet.

Step 3 -Mix together the flour, the salt, and the pepper into a bowl.

Step 4 -Whisk the eggs in a separate bowl.

Step 5 -In a third bowl, toss together the breadcrumbs, the parmesan cheese, and the seasoning blend.

Step 6 -Cut the tilapia fillets into strips, measuring 1-inch-wide each.

Step 7 -Dip each of the fish strips into the flour mixture, evenly coating both sides.

Step 8 -Dip the floured strips into the egg mixture before dipping each of them into the breadcrumb mixture.

Step 9 -Pat each strip to help the coating adhere.

Step 10 -Place the fish strips evenly in a single layer on the prepared sheet.

Step 11 -Bake until golden-brown and the fish flakes, reading 145 degrees F when tested with a meat thermometer, about 10-12 minutes.

Step 12 -Serve!
