  • 1 egg yolk
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, freshly grated, plus more, to taste, for serving
  • 1/2 teaspoon kosher salt
  • 1 lemon
  • 8 ounces pappardelle pasta
  • 2 tablespoons butter
  • 2 tablespoons parsley, freshly chopped

Directions

Step 1 -Bring a large pot of salted water to a boil.

Step 2 -In a large bowl, whisk together the egg yolk, the heavy cream, 1/2 cup of the parmesan, and 1/2 teaspoon of the salt.

Step 3 -Grate the zest from the lemon over the bowl, then slice the lemon in half and squeeze in the juice from one half.

Step 4 -Whisk to combine.

Step 5 -Cook the pappardelle pasta until al dente, according to the package directions.

Step 6 -Drain the pasta and immediately add it to the bowl with the lemon cream mixture.

Step 7 -Top with the butter, then use two forks or a pair of tongs to gently toss the pasta until it is coated with the sauce.

Step 8 -Cover the bowl and let it sit for 5 minutes to thicken.

Step 9 -Serve hot, sprinkled with the parsley, the extra grated parmesan, and more of the lemon zest!
