  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/3 cup white sugar
  • 1 1/2 teaspoons salt
  • 3/4 cup unsalted butter, chilled, cut into small pieces
  • 1 cup buttermilk
  • 2 tablespoons heavy cream
  • 1/4 cup turbinado sugar
  • 8 cups fresh strawberries, sliced
  • 1/4 cup white sugar
  • 1 tablespoon lemon juice

Directions

Step 1 -Set the oven to 425 degrees F, and line a baking tray with parchment paper.

Step 2 -Add together the flour, baking powder, baking soda, 1/3 cup white sugar, and salt in a mixing bowl using a whisk.

Step 3 -Cut up the cold butter and add it to the mixture using a knife or pastry blender until the texture resembles coarse crumbs. For a faster route, you can use a food processor.

Step 4 -Mix in the buttermilk until the flour mixture is just moistened.

Step 5 -Scoop 1/3 cup portions of the dough to form biscuits and place on the baking tray with space to expand.

Step 6 -Brush the biscuits with the heavy cream and sprinkle them heavily with the turbinado sugar.

Step 7 -Bake the biscuits in the oven until they are golden brown, around 15 to 20 minutes.

Step 8 -Add the sliced strawberries, 1/4 cup white sugar, and the lemon juice in a separate bowl.

Step 9 -Let the berries rest to have the juices develop, around 30 minutes.

Step 10 -Serve the strawberry mixture over the biscuits and top with ice cream or fresh cream for optimal enjoyment.
