Not Your Basic Spaghetti doesn't aim for the typical! It strives for more! A garlic-oil sauce with plenty of fresh, herbaceous parsley coats every inch of tender spaghetti! Each bite is fragrant, spicy, and yes, even sharply cheesy! Nothing is the same again with Not Your Basic Spaghetti! And it's a more delicious world for it!
Ingredients
- 1 (16-ounce) package spaghetti
- 1/2 cup extra-virgin olive oil
- 4-5 cloves garlic, finely sliced
- 1 teaspoon dried chili flakes
- 1/4 cup fresh parsley, coarsely chopped, plus more, to taste, for serving
- 1/4 cup parmesan cheese, shredded, for serving
Directions
Step 1 -In a pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions.
Step 2 -Reserve 1/2 cup of the pasta water and drain the remainder.
Step 3 -In a skillet over medium heat, add the olive oil.
Step 4 -Add the garlic and the chili flakes and cook, while stirring, until the garlic is pale gold, about 2-3 minutes.
Step 5 -Add 1/4 cup of the parsley to the garlic mixture and stir to combine.
Step 6 -Add the cooked spaghetti to the garlic mixture and stir until well-coated.
Step 7 -Cook the spaghetti mixture, while stirring, until heated through and the garlic mixture adheres to the spaghetti, about 30 seconds. Gradually add the reserved pasta water, a little at a time, to ensure the spaghetti stays moist and to help the garlic mixture form a sauce.
Step 8 -Serve sprinkled with the extra parsley and the parmesan cheese.
