Nacho Momma's Chicken is like chicken nachos taken to the next level! The chicken is mixed with salsa and chipotle peppers so it's vibrant and spicy on its own, before getting piled on top of crunchy tortilla chips and getting topped with pepper jack and cheddar cheese! Baked until melty and toasty, Nacho Momma's Chicken is like a warm hug of Tex-Mex flavor!
Ingredients
- For the nachos:
- 3 cups rotisserie chicken, shredded and hot
- 1/2 cup jarred restaurant-style salsa
- 1 tablespoon chipotle pepper in adobo, finely chopped
- 1 (12-14-ounce) bag tortilla chips
- 6 ounces pepper jack cheese, shredded
- 6 ounces mild or medium cheddar cheese, shredded
- Optional, for serving:
- 1 medium-sized avocado, diced
- 1 large beefsteak tomato, seeded and chopped
- 1 medium-sized jalapeño, thinly sliced
- 2/3 cup sour cream
- 1/3 cup cilantro, chopped
- 3 scallions, chopped
- 1 lime, cut into wedges
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line a large, rimmed baking sheet with foil.
Step 3 -Add the medium bowl, add the hot chicken, the salsa, and the chipotle pepper and stir to combine.
Step 4 -Spread 1/2 of the tortilla chips in an even layer on the prepared baking sheet.
Step 5 -Top the tortilla chip layer with 1/2 of the chicken mixture, 1/2 of the pepper jack cheese, and 1/2 of the cheddar cheese.
Step 6 -Repeat the layers with the remaining tortilla chips, the remiaing chicken mixture, the remaining pepper jack cheese, and the remaining cheddar cheese.
Step 7 -Bake until the cheese has melted and begun to brown in places, about 8-10 minutes.
Step 8 -Serve topped with your favorite toppings.
