  • For the mini pancakes:
  • 2 tablespoons granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup milk, plus more, to taste
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons butter, melted and cooled slightly, plus more, to taste
  • Optional, for serving:
  • maple syrup, to taste
  • assorted fruit, to taste
  • honey, to taste

Directions

Step 1 -Combine the sugar, the flour, the salt, and the baking powder in a large bowl.

Step 2 -Make a well in the center of the dry ingredients and add 3/4 cup of the milk, the egg, the vanilla, and 2 tablespoons of the butter.

Step 3 -Whisk the wet ingredients together before slowly folding them into the dry ingredients. Mix until just combined; it should still have tiny lumps for maximum fluffiness.

Step 4 -Add 1-2 additional tablespoons of the extra milk as needed to slightly thin out the batter.

Step 5 -Allow your pancake batter to sit for 5 minutes while heating a griddle or nonstick pan over medium-high heat. Lightly grease the griddle or pan with the extra butter.

Step 6 -Pour the pancake batter into a squeezable sauce or condiment bottle. If using a gallon-size plastic bag, cut a small hole in the bottom corner at an angle.

Step 7 -Squeeze small dots of the batter onto the hot and greased pan.

Step 8 -Cook until the tops of the pancakes form bubbles and look dry and set.

Step 9 -Flip the mini pancakes over with a spatula and cook for 1-2 minutes until the undersides are golden.

Step 10 -Repeat that process with the remaining batter, lightly greasing the pan with more of the extra butter between each batch.
