A great turkey burger can blow a beef burger out of the water. The Mexican Turkey Burger is an amazing turkey burger, so beef burgers aren't even in the competition! Resting on a bed of guacamole, the Mexican Turkey Burger is bursting with Tex-Mex spices and heat that brings out the best of the juicy turkey. Topped with homemade salsa and served with cheese, this burger will become a cookout staple immediately.
Ingredients
- For the burger:
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 2 tablespoons brown sugar
- 2 tablespoons olive oil
- 1/2 cup tomato purée
- salt, to taste
- pepper, to taste
- 1 cup turkey, roasted and shredded
- 2 tomatoes, chopped
- 1/4 cucumber, chopped
- 1/2 red onion, chopped
- 1/4 cup mint leaves, chopped
- 1 lime, juiced
- For the avocado mixture:
- 1 clove garlic, crushed
- 2 avocados
- 1 lime, juiced
- For serving:
- 4 bread rolls, split
- 1 head butter lettuce, leaves separated
- 4 slices cheese, of your choice
Directions
Step 1 -In a small saucepan over medium-low heat, bring the cumin, the coriander, the chili powder, the paprika, the brown sugar, the olive oil, and the tomato purée to a simmer.
Step 2 -Add the salt and the pepper.
Step 3 -Cook and stir the tomato mixture until thickened, about 4-5 minutes.
Step 4 -Transfer the tomato mixture to a bowl and add the shredded turkey.
Step 5 -Toss to combine and allow it to cool for 5 minutes.
Step 6 -In another bowl, mix the tomatoes, the cucumbers, the onions, the mint, and the juice of 1 of the limes.
Step 7 -Toss the salsa and season with the salt and the pepper. Set it aside.
Step 8 -In a small bowl, mash together the garlic, the avocado, and the remaining lime juice.
Step 9 -Season the avocado mixture with the salt and the pepper.
Step 10 -Spread the avocado mixture on the bottom of each of the rolls.
Step 11 -Add the lettuce, the turkey mixture, the cheese, and the salsa to each of rolls.
Step 12 -Serve with the remaining tomato salsa!
