Maria's Mozzarella Breakfast Bake is how Maria does breakfast right — by stacking the flavors high! Suspended in a bed of fluffy eggs, you'll find layers of hearty hash browns, succulent Italian sausage, sweet sun-dried tomatoes, and melty mozzarella cheese... in other words, all the best breakfast foods and flavors! Maria was kind enough to share her favorite breakfast bake with us, and we couldn't help but share Maria's Mozzarella Breakfast Bake with you! It's too good to keep to ourselves!
Ingredients
- 1 pound bulk Italian sausage
- 4 cups frozen shredded hash brown potatoes, thawed, can substitute russet potatoes, parboiled and chopped
- 1 cup cheddar cheese, shredded
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- 1/2 cup julienne-cut sun-dried tomatoes in oil with herbs, drained
- 1 cup part-skim mozzarella cheese, shredded
- 4 large eggs
- 3/4 cup 2% milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons parmesan cheese, grated
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large skillet over medium heat, add the sausage and cook, while crumbling, until it is no longer pink, about 6-8 minutes.
Step 3 -Drain the excess fat from the skillet.
Step 4 -In a large bowl, add the hash brown potatoes and the cheddar and mix to combine.
Step 5 -In a 7x11-inch baking dish, layer 1/2 of the hash brown mixture, 1/2 of the cooked sausage, 1/2 of the spinach, and 1/2 of the sun-dried tomatoes, in that order.
Step 6 -Repeat the layers.
Step 7 -Sprinkle the top of the bake with the mozzarella cheese.
Step 8 -In a bowl, add the eggs, the milk, the salt, and the pepper and whisk to combine.
Step 9 -Evenly pour the egg mixture over the top of the bake.
Step 10 -Cover the casserole and bake for 35 minutes.
Step 11 -Sprinkle the bake with the parmesan cheese.
Step 12 -Bake, uncovered, until it is bubbly and the cheese is melted, about 10-15 minutes.
Step 13 -Let the casserole stand for 5-10 minutes.
Step 14 -Serve.
