Ingredients

  • 4 medium chicken breasts, boneless and skinless
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon crushed chili pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup onion, minced
  • 1 pound asparagus, trimmed and cut into thirds
  • 3-4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • 1/4 cup parmesan cheese, optional
  • 1/4 cup chicken stock, optional

Directions

Step 1 -Season the chicken with Italian seasoning, crushed chili pepper, salt, and pepper.

Step 2 -Add 1 tablespoon olive oil to a large skillet over medium heat.

Step 3 -Once the oil is heated, add the chicken to the pan and cook for 5-6 minutes per side.

Step 4 -Transfer the chicken from the skillet and set it aside.

Step 5 -Add the butter, onion, and asparagus to the skillet and cook until just tender, about 2-3 minutes.

Step 6 -Add the garlic and cook until fragrant, about 1 minute.

Step 7 -Add the heavy cream, lemon juice, and parmesan cheese, stirring to combine.

Step 8 -Return the chicken to the pan and simmer until the sauce has thickened and the chicken is cooked through, for about 3-4 minutes. Using a meat thermometer, check to make sure the chicken has an internal temperature of 165 degrees F.

Step 9 -Taste for seasonings.

Step 10 -If the sauce is too thick, add 1/4 cup chicken stock.

Step 11 -Serve hot.
