Ingredients

  • 1 (16-ounce) box spaghetti
  • 2 teaspoons sesame oil
  • 3 green onions, thinly sliced
  • 2 teaspoons ginger, freshly minced
  • 1 pound shrimp, peeled and deveined
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 tablespoon extra-virgin olive oil
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 1/3 cup low-sodium soy sauce
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 2 tablespoons rice vinegar
  • 1/2 cup peanuts, roasted
  • cilantro, optional, freshly chopped, for garnish

Directions

Step 1 -Bring a large pot of salted water to a boil.

Step 2 -Add the pasta to the pot and cook it to al dente, according to the package directions.

Step 3 -Drain the pasta.

Step 4 -In a large skillet over medium heat, heat the sesame oil.

Step 5 -Add the green onions and the ginger and cook until fragrant, about 1 minute.

Step 6 -Add the shrimp.

Step 7 -Season the shrimp with the salt and the pepper.

Step 8 -Cook the shrimp until opaque and cooked through to 145 degrees F, about 3 minutes.

Step 9 -Transfer the shrimp from the skillet.

Step 10 -Heat the olive oil in the same skillet.

Step 11 -Add the bell peppers and cook until soft, about 5 minutes.

Step 12 -Add the garlic and cook until fragrant, about 1 minute.

Step 13 -Add the cornstarch and stir to combine.

Step 14 -Pour in the soy sauce, the chicken broth, the sweet chili sauce, the sriracha, and the rice vinegar, and whisk until combined.

Step 15 -Simmer until the sauce thickens slightly, about 1-2 minutes.

Step 16 -Add the pasta, the shrimp, and the peanuts to the skillet, tossing to combine them with the sauce.

Step 17 -Garnish with the cilantro.

Step 18 -Serve.
