Ingredients
- For the chicken:
- 1/2 cup cider vinegar
- 1 cup orange juice
- 1/4 cup honey
- 1/2 cup brown sugar, packed
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 2 pounds chicken thighs, bone-in and skin-on
- 1 tablespoon olive oil
- salt, to taste
- pepper, to taste
- Optional, for serving:
- kale, to taste, cooked and warm
- orange slices, to taste
- fresh rosemary, to taste, torn
Directions
Step 1 -In a small saucepan, combine the cider vinegar, the orange juice, the honey, the brown sugar, the chili powder, the cumin, and the coriander.
Step 2 -Bring the vinegar mixture to a boil on the stovetop over medium-high heat, then reduce heat and let it simmer until the sauce has been reduced to about 1 cup, about 35-45 minutes.
Step 3 -In a medium-sized saucepan over medium-high heat, add the olive oil.
Step 4 -Generously season the chicken thighs with the salt and the pepper and place in the pan skin-side down. Flip once the thighs are browned and easily come away from the pan.
Step 5 -Cook until 165 degrees F in the center and no longer pink, about 12-14 minutes.
Step 6 -Pour the glaze on top and let it simmer for 1-2 minutes, making sure the chicken thighs are well-coated with the glaze.
Step 7 -Serve with the kale and garnish with the orange slices and the rosemary.
