The chicken is delightfully seasoned with a homemade rub and braised in chicken broth for an extra savory kick, and then baked alongside tender rice that absorbs all the good flavor! Ingredients
- For the rub:
- 1 teaspoon paprika powder
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 3/4 teaspoon salt
- black pepper, to taste
- For the chicken & rice:
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 5 chicken thighs, bone-in and skin removed
- 1 1/2 cups white rice, uncooked
- 1 1/2 cups chicken broth or chicken stock, hot
- 1 1/4 cups water, hot
- fresh thyme leaves or parsley, optional, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Mix the paprika, the dried thyme, the garlic powder, the onion powder, the salt, and the pepper together.
Step 3 -Scatter the onion and the garlic in a baking dish.
Step 4 -Place the butter in the center of the baking dish.
Step 5 -Bake until the onion and garlic are golden-brown, about 15 minutes. Check it after 12 minutes and give it a stir if it seems to be browning too much.
Step 6 -Season the chicken with the rub mixture.
Step 7 -Transfer the baking dish from the oven.
Step 8 -Mix the rice into the onion-garlic mixture.
Step 9 -Place the chicken on the rice.
Step 10 -Pour the chicken broth and the water around the chicken.
Step 11 -Cover the baking dish with foil and bake for 30 minutes.
Step 12 -Uncover and bake until the chicken is cooked through at 165 degrees F and the liquid is absorbed, about 20 minutes.
Step 13 -Let the dish stand for 5 minutes.
Step 14 -Fluff the rice.
Step 15 -Garnish with the thyme leaves and serve.
