Ingredients

  • vegetable oil, to taste
  • 4 green plantains
  • kosher salt, to taste

Directions

Step 1 -In a large cast-iron skillet, Dutch oven, or large heavy pot over medium-high heat, add enough of the vegetable oil to achieve a depth of 1/2 inch.

Step 2 -Heat the oil until it reaches a temperature of 375 degrees F.

Step 3 -Trim the ends off of the plantains and peel them.

Step 4 -Cut the plantains crosswise into 1/2-inch-thick coins.

Step 5 -Line a rimmed baking sheet with a wire rack.

Step 6 -In batches, add the plantains and cook, while turning them occasionally using tongs and making sure they do not stick to each other or to the pot, until golden and starting to crisp, about 2 minutes.

Step 7 -Transfer the fried plantains to the prepared wire rack and repeat until all the plantains are fried. Make sure the oil heats back up to 375 degrees F before adding the next batch.

Step 8 -Reduce the heat to low.

Step 9 -Optionally, gently flatten each of the fried plantains to less than a 1/4-inch thickness.

Step 10 -Increase the heat to medium-high and reheat the oil to 375 degrees F.

Step 11 -In three batches, add the fried plantains to the hot oil and cook, while turning them occasionally, until they are golden-brown and crisp, about 3 minutes.

Step 12 -Transfer the double-fried plantains to the prepared wire rack and immediately season them with the salt.

Step 13 -Repeat until all of the plantains are double-fried and seasoned.

Step 14 -Serve immediately.
