Ingredients

  • For the chicken:
  • 3 pounds chicken thighs, boneless and skinless
  • 1 cup plain Greek yogurt
  • 2 teaspoons cumin
  • 2 teaspoons cardamom
  • 2 teaspoons turmeric
  • 2 teaspoons cinnamon
  • 2 teaspoons salt
  • For the tahini sauce:
  • 1 cup tahini
  • 1/2 cup lemon juice
  • 4 cloves garlic, minced
  • 1 cup water
  • 1 teaspoon salt
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 -Cut the chicken thighs into 1-inch pieces.

Step 2 -In a large bowl, combine the yogurt, the cumin, the cardamom, the turmeric, the cinnamon, and 2 teaspoons of the salt.

Step 3 -Add the chicken pieces to the bowl and toss until they are evenly coated in the marinade.

Step 4 -Cover and refrigerate the chicken for 1 hour.

Step 5 -Tightly skewer the chicken pieces onto soaked bamboo or metal skewers.

Step 6 -Preheat the grill to medium.

Step 7 -Place the marinated skewers on the grill and cook, turning often, until the chicken is cooked to 165 degrees F internally, about 6-8 minutes.

Step 8 -In a small bowl, combine the tahini, the lemon juice, the garlic, the water, and the remaining salt, stirring until smooth.

Step 9 -Serve the chicken warm with the tahini sauce and garnished with the parsley.
