Ingredients

  • 1 tablespoon canola oil
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 2 (4-ounce) cans diced green chiles
  • 1 (16-ounce) container salsa verde, divided
  • 4 cups rotisserie chicken, coarsely shredded
  • 1/2 cup fresh cilantro leaves, chopped
  • 3 cups Monterey Jack cheese, shredded, divided
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 8 (8-inch) flour tortillas, warmed
  • 1/4 cup sour cream, optional, for serving

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease a 9x13-inch baking dish with nonstick cooking spray.

Step 3 -In a large skillet, over medium heat, add the canola oil.

Step 4 -Add in the onions, stirring frequently until translucent, about 2-3 minutes.

Step 5 -Stir in the garlic, the oregano, and the cumin until fragrant, about 1 minute.

Step 6 -Remove the skillet from the heat and stir in the green chiles and their juices.

Step 7 -In a large bowl, combine the green chile mixture, 1/3 cup of the salsa verde, the chicken, and the cilantro. Stir in 1 1/2 cups of the Monterey Jack cheese.

Step 8 -Season with the salt and the pepper.

Step 9 -Lay the tortillas on a flat surface and spoon about 1/2 cup of the chicken mixture in the center of each.

Step 10 -Roll the tortilla and place seam-side down onto the prepared baking dish. Repeat with remaining tortillas and the remaining chicken mixture.

Step 11 -Top with the remaining salsa verde and the remaining Monterey Jack cheese.

Step 12 -Place into the oven and bake until melted and bubbly, about 35-40 minutes.

Step 13 -Top with the sour cream and serve immediately.
