Ingredients

  • 1 ounce butter
  • 2 tablespoons flour
  • 3/4 cup turkey or chicken stock, plus more to taste
  • 1/2 cup 2% milk
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons cranberry sauce
  • 1/2 pound leftover turkey, white and dark meat, cooked and diced
  • 2 ounces leftover ham, cooked and diced
  • 2 ounces sweet corn
  • 4 sheets filo pastry, thawed if frozen

Directions

Step 1 -Preheat the oven to 390 degrees F.

Step 2 -Melt the butter over medium-low heat in a saucepan.

Step 3 -Add the flour to the butter and stir until a smooth paste forms, about 1-2 minutes.

Step 4 -Slowly pour the stock into the flour mixture, stirring constantly and adding a little at a time, until a smooth liquid forms, with no lumps.

Step 5 -Add the milk to the flour mixture and simmer until a smooth sauce forms.

Step 6 -Season the sauce to taste with the salt and the pepper.

Step 7 -Transfer the saucepan from the heat and stir in the cranberry sauce, the turkey, the ham, and the sweet corn.

Step 8 -Divide the mixture between four individual pie dishes or individual casserole dishes.

Step 9 -Shape the filo pastry by scrunching each sheet up from the middle until it can fit in the pie plates or casserole dishes.

Step 10 -Place the filo dough pieces onto the filling in the pie plates.

Step 11 -Bake until the filo dough is golden brown and cooked through according to package directions and the filling is hot and bubbling, about 15 minutes.
