Ingredients

  • vegetable oil, to taste, for frying
  • 1/3 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon paprika
  • 1 egg, white and yolk separated
  • 3/4 cup frozen corn, thawed
  • parsley, to taste, chopped, for garnish

Directions

Step 1 -In a deep-fat fryer, add the vegetable oil and heat to 375 degrees F.

Step 2 -In a medium bowl, add the flour, the salt, the baking powder, and the paprika and stir to combine.

Step 3 -In a large bowl, beat the egg yolk.

Step 4 -Add the corn to the beaten egg yolk and stir to combine.

Step 5 -Add the flour mixture to the corn mixture and mix well to combine.

Step 6 -In a medium bowl, add the egg white and use an electric hand mixer to beat until soft peaks form.

Step 7 -Fold the beaten egg white into the corn mixture.

Step 8 -In heaping tablespoons, drop the corn mixture, in batches, into the heated oil and fry until they are golden-brown, about 3-4 minutes.

Step 9 -Place the corn fritters on a paper-towel-lined plate to drain.

Step 10 -Serve the corn fritters garnished with the parsley.
