Ingredients
- 4 (6-ounce) pork loin chops, boneless
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 3 tablespoons all-purpose flour
- 1 tablespoon canola oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 3 medium nectarines or peaches, peeled and cut into 1/2-inch-thick slices
- 1/2 cup reduced-sodium chicken broth
- 1 tablespoon honey
Directions
Step 1 -Evenly sprinkle the pork chops with the salt, the thyme, and the pepper.
Step 2 -In a shallow bowl, add the flour and dredge each of the seasoned pork chops in it, coating both sides.
Step 3 -In a large skillet over medium heat, add the oil.
Step 4 -Add the dredged pork chops to the heated oil and cook until they reach an internal temperature of 145 degrees F, about 4-5 minutes per side.
Step 5 -Transfer the cooked pork chops to a plate and keep them warm.
Step 6 -In the same skillet, add the onions and cook, while stirring, about 2 minutes.
Step 7 -Add the garlic to the onions and cook, while stirring, about 1 minute.
Step 8 -Add the nectarines to the onion-garlic mixture and cook until they are lightly browned on both sides.
Step 9 -Stir the chicken broth and the honey into the nectarine mixture and bring to a boil.
Step 10 -Reduce the heat and simmer the sauce until the nectarines are soft and the sauce has slightly thickened, about 5 minutes.
Step 11 -Serve the pork chops topped with the nectarines and the sauce.
