Fettuccine Alfredo Surprise is a new way to make your favorite pasta! The sneaky, secret ingredient?! Blended cauliflower that gets added to that creamy, cheesy sauce you love so much. This version is a little on the lighter side, making your heart and tummy happy all at once. Feel great about what you're eating with Fettuccine Alfredo Surprise! It's so good!
Ingredients
- 1 small head cauliflower, cut into florets
- 1 (16-ounce) box fettuccine pasta
- 1/2 cup parmesan cheese, grated, plus more, to taste, for garnish
- 1/4 cup extra-virgin olive oil
- 2 cloves garlic
- 1/2 teaspoon Dijon mustard
- 3 tablespoons unsalted butter
- 2 tablespoons fresh lemon juice
- 1 teaspoon sea salt
- freshly ground black pepper, to taste
- fresh parsley, to taste, chopped, for garnish
Directions
Step 1 -In a large pot of salted, boiling water, cook the cauliflower florets until they are fork-tender, about 8-10 minutes.
Step 2 -While the cauliflower is cooking, in a second large pot of salted, boiling water, cook the pasta to al dente, according to the package directions.
Step 3 -Drain the cauliflower and place the florets in a blender.
Step 4 -Add 1/2 cup of the parmesan cheese, the olive oil, the garlic, the mustard, the butter, the lemon juice, the salt, and the pepper to blender.
Step 5 -Reserve 1 1/2 cups of the pasta cooking water and drain the rest.
Step 6 -Add 1 cup of the reserved pasta water to the cauliflower mixture and blend until it is creamy.
Step 7 -In a large bowl, add the cooked pasta and top with the sauce. Toss to combine. If the sauce is too thick, add the remaining pasta water and toss to combine.
Step 8 -Garnish the pasta with the parsley, more of the pepper, and the extra parmesan cheese.
