Ingredients

  • For the sauce:
  • 1/4 cup hoisin sauce
  • 1/4 cup water
  • 1 tablespoon low-sodium soy sauce
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes
  • salt, to taste
  • black pepper, to taste
  • For the stir-fry:
  • 6 ounces ramen noodles
  • 2 teaspoons olive oil
  • 1 cup cabbage, sliced
  • 4 cups vegetables, such as bell peppers, carrots, snap peas, and bean sprouts, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon fresh ginger, grated

Directions

Step 1 -In a bowl, whisk the hoisin sauce, the water, the soy sauce, the cornstarch, the sesame oil, the red pepper flakes, the salt, and the pepper together.

Step 2 -In a large pot of boiling water, cook the ramen until it is tender, about 3 minutes.

Step 3 -Reserve 1 cup of the pasta water and drain the rest.

Step 4 -In a skillet over medium heat, add the olive oil, the cabbage, and the vegetables and cook until the veggies are crisp-tender, about 3-4 minutes.

Step 5 -Add the garlic and the ginger to the veggies and cook until they are fragrant, about 1 minute.

Step 6 -Add the sauce to the veggies and simmer until the sauce has thickened, about 3-5 minutes.

Step 7 -Stir the cooked ramen into the veggie mixture.

Step 8 -Add the reserved pasta water, a little at a time, until the sauce has reached the desired consistency.

Step 9 -Serve.
