Ingredients

  • For the spice mix:
  • 1 teaspoon seasoned salt
  • 1 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried rosemary
  • For the potatoes:
  • 4 tablespoons extra-virgin olive oil, plus more, to taste, for greasing the pan
  • 4 large baking potatoes, peeled and washed, cut into wedges
  • 8 large cloves garlic, chopped
  • 1 lemon, juiced
  • 1 1/4 cups vegetable stock
  • 1/2 cup parmesan cheese, grated
  • 1 cup parsley leaves, optional, coarsely chopped, for garnish

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -In a small bowl, add the seasoned salt, the black pepper, the sweet paprika, and the dried rosemary.

Step 3 -Using the extra olive oil, lightly grease a 9x13-inch baking dish.

Step 4 -Add the potatoes to the prepared baking dish.

Step 5 -Sprinkle the potatoes with the spice mix and toss them to evenly distribute the spices.

Step 6 -In a medium mixing bowl, add the garlic, the remaining 4 tablespoons of the olive oil, the lemon juice, and the stock and whisk to combine.

Step 7 -Pour the stock mixture over the potatoes.

Step 8 -Cover the baking dish with foil.

Step 9 -Bake the potatoes, covered, for 40 minutes.

Step 10 -Uncover the potatoes and sprinkle them evenly with the parmesan cheese.

Step 11 -Bake the potatoes until they are cooked through and golden-brown, about 10-15 minutes.

Step 12 -Serve hot and garnished with the parsley.
