Ingredients

  • 1 cup canned pumpkin purée
  • 1/2 cup vegetable or canola oil
  • 1 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 1 1/2 cups semisweet chocolate chips, plus more, to taste

Directions

Step 1 -In a large bowl, add the pumpkin purée, the oil, the sugar, the egg, and the vanilla extract and mix until well-combined.

Step 2 -Add the baking soda, the pumpkin pie spice, the baking powder, the salt, and the flour to the pumpkin mixture and stir until just combined.

Step 3 -Fold in 1 1/2 cups of the chocolate chips.

Step 4 -Cover the bowl and the chill the dough for at least 1 hour and up to 8 hours.

Step 5 -Preheat the oven to 350 degrees F.

Step 6 -Line a baking sheet with parchment paper or a nonstick baking mat.

Step 7 -Drop the cookie dough onto the baking sheet, using about 2 tablespoons of dough for each cookie. Keep the cookies about 2 inches apart from each other.

Step 8 -Sprinkle the extra chocolate chips over the cookies and press them into the tops of each of the cookies.

Step 9 -Bake until the tops are set and the edges are light golden-brown, about 8-12 minutes.

Step 10 -Let the cookies rest on the baking sheet for 5 minutes.

Step 11 -Transfer the cookies to a cooling rack.

Step 12 -Serve.
