Ingredients
- 8 (6-ounce) chicken breasts, boneless and skinless, pounded 1/4-inch-thick
- 1/2 teaspoon kosher salt, plus more, to taste
- 1 cup all-purpose flour
- 2 tablespoons whole-grain mustard
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon nutmeg, freshly grated
- 1/2 cup milk
- 2 large eggs
- 2 cups panko breadcrumbs
- 4 tablespoons fresh parsley, finely chopped, plus more, to taste, for garnish
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly ground black pepper
- vegetable oil, to taste
Directions
Step 1 -Evenly sprinkle both sides of the chicken breasts with the extra salt.
Step 2 -In a shallow bowl, add the all-purpose flour, the whole-grain mustard, the cayenne pepper, and the grated nutmeg and mix to combine.
Step 3 -In a second shallow bowl, add the milk and the eggs and whisk to combine.
Step 4 -In a third shallow bowl, add the panko breadcrumbs, 4 tablespoons of the parsley, the garlic powder, the remaining 1/2 teaspoon of the salt, and the black pepper and stir to combine.
Step 5 -Evenly dredge each of the seasoned chicken breasts into the flour mixture, coating both sides and shaking off any of the excess.
Step 6 -Dip the floured chicken breasts into the egg-milk mixture, allowing any of the excess to drip off.
Step 7 -Dredge the coated chicken breasts into the breadcrumb mixture and press lightly to adhere.
Step 8 -In a large skillet over medium-high, add the vegetable oil.
Step 9 -Add the breaded chicken breasts to the heated oil and cook until they are golden-brown and reach an internal temperature of 165 degrees F, about 3-4 minutes on each side.
Step 10 -Transfer the cooked chicken schnitzels to a paper-towel-lined plate to drain.
Step 11 -Serve the chicken schnitzels garnished with the extra parsley.
