Ingredients
- 1 1/2 pounds chicken breasts, diced
- 1 teaspoon paprika
- 4 tablespoons butter
- 1 large onion, diced
- 2 teaspoons Italian seasoning
- fresh cracked pepper, to taste
- salt, to taste
- 3 cloves garlic, minced
- 2 1/2 cups chicken stock
- 1 cup white rice
- 1/2 cup heavy cream
- 1/4 cup parmesan, plus more for serving, grated
- parsley, optional, for garnish
Directions
Step 1 -Season the chicken with the paprika and toss quickly to coat.
Step 2 -In a large skillet over medium-high heat, melt the butter.
Step 3 -Add the onion to the melted butter and cook until translucent, about 2-3 minutes.
Step 4 -Add the chicken, the Italian seasoning, the pepper, and the salt to the onion mixture and cook, stirring often, until the chicken is golden on all sides, about 5 minutes.
Step 5 -Add the garlic to the chicken mixture and cook for 1 minute.
Step 6 -Add the chicken stock and the rice into the chicken mixture and bring the mixture to a boil.
Step 7 -Reduce the heat to medium-low, cover, and simmer the chicken mixture until the rice is completely tender, about 15-20 minutes.
Step 8 -Stir the heavy cream and the parmesan into the chicken mixture.
Step 9 -Taste and adjust the seasoning with the salt and the pepper as needed.
Step 10 -Serve with the parsley and the extra parmesan.
