Ingredients
- 3/4 pound ground beef
- 1/2 cup refried beans
- 1 (4-ounce) can chopped green chiles, drained
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 4 (8-inch) flour tortillas
- 2 tablespoons butter, melted
- 1 1/3 cups Mexican cheese blend, shredded
- paprika, optional, to taste
Directions
Step 1 -Preheat the oven to 475 degrees F.
Step 2 -Lightly grease a baking sheet.
Step 3 -In a large skillet over medium heat, cook the beef, while crumbling the meat, until it is no longer pink, about 5-7 minutes.
Step 4 -Drain the fat from the skillet.
Step 5 -Stir the beans, the chiles, the oregano, the cumin, and the salt into the beef mixture and cook over medium-low heat until it is heated through, about 3-4 minutes.
Step 6 -Brush one side of the tortillas with the butter.
Step 7 -Spoon 1/2 cup of the beef mixture over 1/2 of the unbuttered side of the tortillas.
Step 8 -Sprinkle the meat with 1/3 cup of the cheese each.
Step 9 -Fold the tortillas in half and place them on the prepared baking sheet.
Step 10 -Sprinkle the tortillas with the paprika.
Step 11 -Bake the quesadillas until they are crisp and golden-brown, about 8-10 minutes.
Step 12 -Cut each quesadilla into wedges.
Step 13 -Serve hot.
