Ingredients

  • 1 1/4 cups lukewarm water
  • 1 tablespoon plus 1 teaspoon granulated sugar, divided
  • 1 (0.25-ounce) packet active dry yeast
  • 5 cups all-purpose flour, plus more, to taste, for dusting the work surface
  • 2 teaspoons kosher salt
  • 1 cup mashed potatoes, store-bought or homemade
  • 6 tablespoons butter, softened, plus 2 tablespoons, melted, divided

Directions

Step 1 -In a small glass bowl, add the lukewarm water and 1 teaspoon of the sugar and stir to combine.

Step 2 -Sprinkle the yeast over the sugar-water mixture and let it sit, without stirring, until foamy, about 5 minutes.

Step 3 -Stir the yeast into the sugar-water mixture.

Step 4 -In the bowl of a stand mixer with the dough hook attached, add 5 cups of the flour, the remaining sugar, and the salt and stir to combine.

Step 5 -Add the yeast mixture and the mashed potatoes to the flour mixture and stir to combine.

Step 6 -With the mixer running, add 6 tablespoons of the softened butter, 1 tablespoon at a time, and mix until fully incorporated after each addition.

Step 7 -Continue to mix until a smooth dough forms, about 5 minutes.

Step 8 -Coat a large bowl with cooking spray.

Step 9 -Transfer the dough to the prepared bowl and cover it with a clean kitchen towel.

Step 10 -Let the dough rise until it doubles in size, about 1 hour.

Step 11 -Punch the dough down to deflate it.

Step 12 -Using the extra flour, lightly dust a work surface.

Step 13 -Turn the dough out onto the prepared surface.

Step 14 -Divide the dough into 12 equal pieces and roll each into a smooth ball.

Step 15 -Grease a 9x13-inch baking pan with cooking spray.

Step 16 -Place the balls in the prepared baking pan, about 1 inch apart.

Step 17 -Cover the dough balls and let them rise, about 45 minutes.

Step 18 -Preheat the oven to 400 degrees F.

Step 19 -Brush the tops of the dough with 1 tablespoon of the melted butter.

Step 20 -Bake until golden, about 25 minutes.

Step 21 -Brush the rolls with the remaining melted butter.

Step 22 -Serve.
