Ingredients
- 1 tablespoon oil
- 4 cups green cabbage, chopped
- 3 large carrots, peeled, chopped
- 2 ribs celery, finely chopped
- 1 medium onion, finely chopped
- 3 cups low-sodium chicken or vegetable broth
- 1 (14-ounce) can diced tomatoes with Italian seasonings
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
Step 1 -In a large soup pot over medium heat, add the oil.
Step 2 -Add the cabbage, the carrots, the celery, and the onions to the hot oil and cook, while stirring often, until the onions are translucent, about 5 minutes.
Step 3 -Add the broth, the tomatoes and their juices, the salt, and the pepper and stir to combine.
Step 4 -Bring the soup to a simmer.
Step 5 -Cover the pot and reduce the heat to medium-low.
Step 6 -Allow the soup to simmer, while stirring occasionally, until the vegetables are tender, about 40 minutes-1 hour.
Step 7 -Serve.
