Ingredients

  • 1 (3-4 pound) pot roast
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper, crushed or ground
  • 2 tablespoons oil

Directions

Step 1 -Transfer the roast from the refrigerator about 60 minutes before cooking.

Step 2 -Preheat the oven to 325 degrees F.

Step 3 -Season the roast with the salt and the pepper.

Step 4 -In a very large skillet, heat the oil over medium-high heat.

Step 5 -Add the roast to the hot oil and brown on all sides, about 2-3 minutes per side.

Step 6 -Transfer the roast to a wire rack on a baking sheet.

Step 7 -Bake the roast for approximately 25-30 minutes for every pound of meat, removing the roast from the oven when it's approximately 10 degrees shy of medium doneness, which is about 145 degrees F (the roast will continue to cook while it rests). For a 3-pound roast, cook for about 1 hour 15 minutes.

Step 8 -Let the roast rest for at least 15 minutes, tented in aluminum foil to keep warm.

Step 9 -Carve and serve.
